Jasper’s Wild Mushroom Stir Fry

2 tbspsesame oil or vegetable oil

3 cupsassorted wild mushrooms (shiitake, oyster, chanterelle), cleaned and sliced

1 cupjulienned carrots

2 clovesgarlic, minced

1 tbsprice vinegar

1 tspsesame seeds

Method
- Heat a wok or large skillet over medium-high heat and add the sesame oil. Once hot, toss in the garlic and ginger, stirring for about 30 seconds until fragrant. Add the sliced wild mushrooms and cook for 5 minutes, stirring occasionally.
- Add the carrots and peas to the pan, continuing to stir fry for another 3 to 5 minutes. The carrots should soften slightly but still retain a bit of crunch, and the peas should be bright green and tender. Season with a pinch of salt and black pepper. Pour in the soy sauce and rice vinegar, tossing everything together so the vegetables are evenly coated and the sauce lightly glazes them.
- Remove from heat and taste for seasoning, adjusting with more soy sauce or vinegar if desired. Sprinkle with toasted sesame seeds and chopped scallions for a pop of flavor and color. Serve hot as a side dish or over steamed rice or noodles for a hearty vegetarian meal.
