4 CupsFresh shucked corn kernels /4 ears of corn

2/3 CupMayonnaise

1/2 CupSour cream

3/4 CupCotija cheese, crumbled

1Garlic clove, minced

1/2 TspChili powder

Juice of 1 lime

2 TbspChopped cilantro

Method
- Fire up the grill, grill corn and cut kernels off the cob. Sauté in a skillet over medium-high heat for 5–7 minutes until lightly charred.
- In a large bowl, mix mayonnaise, sour cream, garlic, chili powder, lime juice, jalapeño and a pinch of salt.
- Add the warm corn and mix until coated.
- Stir in cotija cheese and cilantro.
- Serve warm or chilled. Garnish with extra cheese and chili powder if desired.
