Jasper’s Mexican Street Corn Elotes Salad 

Ingredients for 4-6 Servings

  • 4 Cups
    Fresh shucked corn kernels /4 ears of corn
  • 2/3 Cup
    Mayonnaise  
  • 1/2 Cup
    Sour cream  
  • 3/4 Cup
    Cotija cheese, crumbled  
  • 1
    Garlic clove, minced  
  • 1/2 Tsp
    Chili powder  
  • Juice of 1 lime  
  • 2 Tbsp
    Chopped cilantro  
  • Salt to taste  
  • 2 Tbsp
    Jalapeño, minced

Method

  1. Fire up the grill, grill corn and cut kernels off the cob. Sauté in a skillet over medium-high heat for 5–7 minutes until lightly charred.
  2. In a large bowl, mix mayonnaise, sour cream, garlic, chili powder, lime juice, jalapeño and a pinch of salt.
  3. Add the warm corn and mix until coated.
  4. Stir in cotija cheese and cilantro.
  5. Serve warm or chilled. Garnish with extra cheese and chili powder if desired.
