For the Caesar Dressing (makes ~1 cup)

2Anchovy fillets, finely minced

1Garlic clove, minced

1/2 cupSour cream

1/4 cupButtermilk

2 TbspMayonnaise

2 TspDijon mustard

1 TbspRed wine vinegar (or lemon juice)

For the Wraps

2 cupsGrilled shrimp chopped

1/4 cupGrated Parmesan cheese

2 cupsChopped romaine lettuce

1/2 cupCroutons, lightly crushed

4Large flour tortillas or wraps

Method
- Whisk all dressing ingredients together in a bowl until smooth and creamy.
- Toss chopped shrimp with some of the Caesar dressing in a large bowl.
- Add chopped romaine, Parmesan, and croutons, and toss again to coat lightly.
- Warm tortillas slightly for easier folding. Spoon filling into the center of each tortilla, wrap tightly, and serve immediately or chill slightly before serving.
