Ingredients for 4-6 Servings

  • 1 Cup
    Whole milk ricotta cheese
  • 1 Cup
    Semisweet chocolate chips
  • 1/2 Cup
    Whole milk
  • 1/4 Cup
    Sugar
  • 1 Tsp
    Vanilla extract
  • Pinch of salt

Method

  1. In a small saucepan, heat the milk over medium heat until it just begins to simmer. Remove from heat and add the chocolate chips, stirring until completely melted and smooth.
  2. In a blender or food processor, combine the ricotta cheese, sugar, vanilla extract, and salt. Pour in the warm chocolate mixture and blend until the mixture is silky and creamy.
  3. Divide the mixture evenly among small ramekins or serving glasses. Chill in the refrigerator for at least 2 hours, or until set. Serve topped with a dollop of whipped cream and fresh raspberries.
