Method
- In a small saucepan, heat the milk over medium heat until it just begins to simmer. Remove from heat and add the chocolate chips, stirring until completely melted and smooth.
- In a blender or food processor, combine the ricotta cheese, sugar, vanilla extract, and salt. Pour in the warm chocolate mixture and blend until the mixture is silky and creamy.
- Divide the mixture evenly among small ramekins or serving glasses. Chill in the refrigerator for at least 2 hours, or until set. Serve topped with a dollop of whipped cream and fresh raspberries.
