Jasper’s Beef Kebobs & Toum

Jasper’s Beef Kebobs & Toum

Ingredients for 4-6 Servings

  • Lebanese Garlic Sauce (Toum)
  • 3 Cups
    Garlic Cloves
  • 2 teaspoons salt
    Salt
  • 1 Cup
    Vegetable Oil, adjust more or less as needed
  • ½ Cup
    Lemon Juice
  • Beef Kebobs
  • 2 Lbs
    Beef Sirloin or Tenderloin, Cut Into 1½-inch cubes

    Medium Onions, Cut Into Wedges
  • 1
    Red Bell Pepper, Cut Into Squares
  • 1
    Green Bell Pepper, Cut Into Squares
  • Pita Bread, for Serving
  • Fresh Parsley & Lemon Wedges, for Garnish

    Garlic Cloves, Minced
  • 2 tbsp
    Fresh Lemon Juice
  • 1 tbsp
    Red Wine Vinegar
  • 1 tsp
    Ground Coriander
  • 1 tsp
    Paprika
  • ½ tsp
    Cinnamon (Traditional Lebanese Touch)
  • ½ tsp
    Allspice
  • ½ tsp
    Black Pepper
  • 1 tsp
    Salt

Method

  1. Slice the garlic cloves in half lengthwise and remove any green sprouts. Transfer the sliced garlic cloves into a food processor and add the kosher salt to the garlic cloves. Process for a minute until the garlic becomes finely minced. Make sure to scrape down the sides of the food processor afterwards. While the food processor is running, slowly pour one to two tablespoons of oil, then stop and scrape down the bowl. Continue adding another tablespoon or two until the garlic starts looking creamy.
  2. In a large bowl, whisk together all the marinade ingredients.
  3. Add the beef cubes and coat well. Cover and refrigerate at least 2 hours (overnight is best).
  4. Preheat grill to medium-high.
  5. Thread beef cubes onto skewers, alternating with onion and bell pepper pieces.
  6. Grill 8–10 minutes, turning occasionally, until beef is charred outside but still juicy (medium).
  7. Serve immediately with toum, warm pita, parsley, and lemon wedges.
