1 CupItalian breadcrumbs

26 Oz. Filet mignon (each cut in half)

4 TbspButter

2 CupsMushrooms, sliced

1/2 CupWhite wine

Salt & pepper

Sliced mozzarella

Method
- Preheat oven to 400° F. Rub steaks with oil, dredge in breadcrumbs, set aside for 5 minutes.
- Heat 2 T butter in skillet over medium/high. Place medallions in skillet and cook until well browned, about 3 minutes. Flip medallions and brown reverse side for about 3 more minutes.
- In a separate sauté pan, add more butter and sauté mushrooms with salt and pepper. Add to the pan with steaks.
- Leave medallions in pan, place in oven and roast until meat registers 120° to 125°(for medium rare), 3 minutes perhaps.
