Method
- Bring a large pot of salted water to a boil. Add the broccoli florets and cook for 3-4 minutes until tender but still vibrant. Using a slotted spoon, transfer the broccoli to a bowl, reserving the cooking water. Add the pasta to the same water and cook until al dente according to package instructions.
- While the pasta cooks, heat the olive oil in a large skillet over medium heat. Add the garlic and onions, cooking until fragrant and softened, about 3-5 minutes. Stir in the red pepper flakes if using, and sauté for an additional minute. Add the cooked broccoli to the skillet and mash some of it gently with a fork to create a creamy texture.
- Drain the pasta, reserving about 1 cup of the pasta water. Add the pasta to the skillet with the broccoli mixture, stirring to combine. Gradually add the reserved pasta water as needed, letting the pasta cook in the sauce for 2-3 minutes until well coated and infused with flavor. Adjust the seasoning with sea salt, then plate and finish with grated Romano cheese and a drizzle of olive oil.
