Ingredients for 8 Servings

    Vegetable oil
  • 1
    White onion, diced
  • 1
    Red bell pepper, diced
  • 1
    Green bell pepper, diced
  • 3
    Cloves of garlic, minced
  • 1/2 ts
    Salt
  • 2 tbs
    Chili powder
  • 2 ts
    Cumin powder
  • 2 ts
    Dried oregano
  • 4 tbs
    Tomato paste
  • 1 can
    Diced tomatoes (14.5 oz can)
  • 1 cup
    Water
  • 1 can
    Chickpeas
  • 1 can
    Red kidney beans
  • 1 can
    Black beans

Method

  1. Heat oil in a heavy stockpot over medium heat. Add onion, bell peppers, garlic and salt and cook until tender, 7-10 minutes.
  2. Add spices, tomato paste, diced tomatoes, and water.
  3. Turn down to medium-low and cook for 15-20 minutes, occasionally stirring, until thickened.
  4. Add beans with their liquid to chili and simmer for 25-30 minutes.
