Prep time: 30 minutes
Cook time: 30-40 minutes
Serve count: 25-100
Ingredients
Steak bites
8 lb Certified Angus Beef® KC strip steaks
2 tbsp olive oil
3 tbsp kosher salt
2 tbsp coarse black pepper
2 tbsp smoked paprika 1 tbsp garlic powder
1 tbsp onion powder
Glaze and garnish
4 cups Joe’s Kansas City Original BBQ Sauce
1½ cups apple cider
¼ cup honey
2 tbsp apple cider vinegar
2 tbsp butter
1–2 charred jalapeños, finely chopped
Crispy fried onions; dill pickle chips; sliced green onion
Method
1. Char the jalapeños until blistered and lightly blackened. Cool and finely chop.
2. Trim steaks and cut into approximately 1-inch cubes. Combine the salt, pepper, paprika, garlic powder and onion powder; season the steak evenly.
3. Lightly coat a grill or electric skillet with olive oil. Cook steak bites in small batches, searing on all sides. Remove and hold warm.
4. Combine BBQ sauce, apple cider, honey, vinegar and jalapeños in a saucepan. Simmer uncovered for 20–25 minutes, stirring occasionally, until reduced and thickened.
5. Remove from heat and stir in butter. Toss the steak bites with enough warm glaze to coat.
6. Serve two steak bites per tasting cup, topped with crispy fried onions and sliced green onion, with a dill pickle chip.
