Flattop Philly Cheesesteak Sliders
Prep time: 30 minutes
Cook time: 20-25 minutes
Serve count: 6 (12 sliders)
Ingredients
4 Certified Angus Beef® top sirloin fillets, 8 oz each
12 slider buns
12 slices provolone
3 medium yellow onions
3 whole green bell peppers
1½ cups white mushrooms
3 tbsp butter
3 tbsp canola oil
1½ tbsp Worcestershire sauce
¾ tsp garlic powder
1½ tsp salt
¾ tsp black pepper
Method
1. Freeze the sirloin fillets for 20–25 minutes to firm up for thin slicing. Meanwhile, slice onions into thin half-moons, peppers into thin strips and mushrooms into slices.
2. Preheat the flat top to medium-high. Add 1½ tbsp canola oil and the vegetables. Season with ¾ tsp black pepper. Cook, stirring occasionally, until softened and caramelized.
3. Push vegetables to one side to keep warm. Thinly slice the firmed sirloin against the grain, then roughly chop into bite-sized pieces.
4. Add remaining 1½ tbsp oil. Spread sirloin in a single layer. Season with ¾ tsp salt, ⅜ tsp black pepper and ¾ tsp garlic powder. Sear undisturbed for 2 minutes, then chop and stir.
5. Add Worcestershire sauce and mix in the vegetables. Stir and cook until meat is fully cooked through with no pink remaining.
6. Divide into 12 equal portions on the flat top. Top each with a slice of provolone. Cover with a dome lid or foil tent to melt the cheese.
7. While cheese melts, add 3 tbsp butter to a clean section of the flat top. Toast buns cut-side down until golden brown.
8. Scoop each cheesy steak portion onto a toasted bun bottom, add the bun lid and serve immediately, 2 sliders per person.
