    Apricot Preserves

    Apricots, Pitted and Chopped

    Hot Honey

    Bourbon
  • 2 Tablespoons
    Apple Cider Vinegar
  • 3
    Cloves Garlic, Minced

    Paprika

    Chopped Fresh Thyme
  • 1 Teaspoon
    Chopped Fresh Rosemary
  • Salt and Freshly Ground Black Pepper

Method

  1. Preheat the oven to 400°F and pat the pork tenderloins dry with paper towels. Season generously with salt, pepper, and paprika, rubbing the spices evenly over the surface. In a large oven-safe skillet, heat the olive oil over medium-high heat and sear the tenderloins on all sides until golden brown, about 2 to 3 minutes per side.
  2. Remove from the pan and set aside while you prepare the glaze.
  3. In the same skillet, reduce the heat to medium and add the garlic, letting it cook just until fragrant. Stir in the apricot preserves, chopped apricots, hot honey, bourbon, and apple cider vinegar. Let the mixture simmer for about 5 minutes, stirring often, until it thickens slightly and the fresh apricots begin to soften. Add the thyme and rosemary, blending all the flavors together.
  4. Return the seared pork tenderloins to the skillet, spooning some of the glaze over the top. Transfer the skillet to the preheated oven and roast for 15 to 20 minutes, basting once or twice with the glaze, until the internal temperature reaches 145°F. The glaze should be glossy and caramelized around the edges of the pork.
  5. Remove the pork from the oven and let it rest for about 5 minutes before slicing. Spoon the remaining warm glaze from the skillet over the slices for serving.
