Method
- Begin by preparing the chuck roast. If you’d like extra flavor, pat the roast dry and season it lightly with salt and pepper. Heat a large skillet with a little oil over medium-high heat and sear the roast on all sides until it forms a deep golden crust. This step is optional, but it builds a richer flavor base for the finished dish.
- Once seared, place the roast into the slow cooker. Sprinkle the dry ranch dressing mix evenly over the top, followed by the au jus gravy mix. Lay the stick of butter directly on top of the roast, then add the pepperoncini peppers around it. For a little extra tang, pour in a small splash of the pepperoncini brine.
- Cover the slow cooker with the lid and cook the roast on low for about 8 hours, or on high for 4 to 5 hours, until the meat is fall-apart tender. When finished, shred the roast directly in the slow cooker using two forks, mixing it into the flavorful juices.
- Serve the Mississippi Pot Roast warm with mashed potatoes, rice, or buttered noodles. It’s also delicious piled onto sandwich rolls for hearty leftovers the next day.
