Chef Jasper’s Guacamole and Shrimp Tostadas

1 lbmedium shrimp, peeled and deveined

4 – 6tostada shells

2ripe avocados

1/4 cupred onion, finely chopped

1small tomato, seeded and diced

1 tbsplime juice

1 tbspchopped fresh cilantro

1 smalljalapeño, finely chopped

garbanzo beans (optional)

Additional toppingscrumbled queso fresco & fresh corn kernels

Method
- Toss the shrimp with olive oil, chili powder, cumin, salt, and pepper. Heat a skillet over medium-high heat and cook the shrimp for 2 to 3 minutes per side until pink and cooked through.
- Remove from the pan and set aside to cool slightly. For the guacamole, mash the avocados in a bowl until smooth but still chunky. Stir in the red onion, tomato, lime juice, cilantro, and jalapeño if using. Season with salt to taste.
- To assemble, spread a generous layer of guacamole on each tostada shell. Top with several shrimp and garnish with extra cilantro, a squeeze of lime, queso, fresco cheese, and fresh shuck, corn. Serve immediately so the shells stay crisp.
