Jasper’s Wild Mushroom Stir Fry

Ingredients for 4-6 Servings

  • 2 tbsp
    sesame oil or vegetable oil
  • 3 cups
    assorted wild mushrooms (shiitake, oyster, chanterelle), cleaned and sliced
  • 1 cup
    peas
  • 1 cup
    julienned carrots
  • 2 cloves
    garlic, minced
  • 1 tbsp
    fresh ginger, minced
  • 2 tbsp
    soy sauce
  • 1 tbsp
    rice vinegar
  • 1 tsp
    sesame seeds
  • Salt and pepper to taste
  • Scallions for garnish

Method

  1. Heat a wok or large skillet over medium-high heat and add the sesame oil. Once hot, toss in the garlic and ginger, stirring for about 30 seconds until fragrant. Add the sliced wild mushrooms and cook for 5 minutes, stirring occasionally.
  2. Add the carrots and peas to the pan, continuing to stir fry for another 3 to 5 minutes. The carrots should soften slightly but still retain a bit of crunch, and the peas should be bright green and tender. Season with a pinch of salt and black pepper. Pour in the soy sauce and rice vinegar, tossing everything together so the vegetables are evenly coated and the sauce lightly glazes them.
  3. Remove from heat and taste for seasoning, adjusting with more soy sauce or vinegar if desired. Sprinkle with toasted sesame seeds and chopped scallions for a pop of flavor and color. Serve hot as a side dish or over steamed rice or noodles for a hearty vegetarian meal.
