Ingredients for 2-4 Servings

  • 4 Tbsp
    Olive Oil
  • 1 Cup
    Italian breadcrumbs
  • 2
    6 Oz. Filet mignon (each cut in half)
  • 4 Tbsp
    Butter
  • 2 Cups
    Mushrooms, sliced
  • 1/2 Cup
    White wine
  • Salt & pepper
  • Sliced mozzarella

Method

  1. Preheat oven to 400° F. Rub steaks with oil, dredge in breadcrumbs, set aside for 5 minutes.
  2. Heat 2 T butter in skillet over medium/high. Place medallions in skillet and cook until well browned, about 3 minutes. Flip medallions and brown reverse side for about 3 more minutes.
  3. In a separate sauté pan, add more butter and sauté mushrooms with salt and pepper. Add to the pan with steaks.
  4. Leave medallions in pan, place in oven and roast until meat registers 120° to 125°(for medium rare), 3 minutes perhaps.
