Chef Jasper’s Feast of the 7 Fishes Clam Sauce

Here is the classic Italian Christmas Eve dish. This recipe is very popular in homes and is easy to prepare. The Feast of the Seven Fishes typically consists of seven different seafood dishes. The tradition comes from Southern Italy, where it is known as The Vigil (La Vigilia). Christmas Eve is a vigil or fasting day, and the abundance of seafood reflects the observance of abstinence from meat until the feast of Christmas Day itself. This celebration commemorates the wait, the Vigilia di Natale, for the midnight birth of the baby Jesus.

Chef Jasper’s Feast of the 7 Fishes Clam Sauce

Ingredients for 6-8 Servings

  • 12 oz Can clams
  • 12 Fresh clams
  • 3-4
    Cloves of garlic, sliced
  • 1 Tbsp
    Fresh parsley, chopped
  • 1/2 Onion minced
  • Pinch of crushed red pepper
  • Pinch of black pepper
  • 4 Tbsp
    Extra virgin olive oil
  • 1/2 tsp
    Sugar
  • 1/4 cup
    White wine
  • 3/4 Lb. Linguine

Method

  1. Place 2 quarts of water in a large pot and bring to a boil. Add linguine and cook al dente. Strain. Set aside.
  2. Add olive to sauté pan over medium heat. Add onion. Sauté. Add garlic. Cook for one minute. Do not burn garlic. Add clams and canned clams with juice.
  3. Add sugar, salt, black pepper, red pepper and parsley. Add white wine. Bring to a boil. Add cooked pasta and toss.
