Baked Cod in Lemon Onion Sauce

1 mediumOnion, halved and sliced

1Lemon, juiced and divided

1 cupPanko breadcrumbs

Method
- Preheat oven to 400 degrees. In a cast iron pan, sauté onions in 1 tablespoon olive oil until soft.
- Make crumb topping in a medium sized bowl by mixing panko crumbs with half the parsley, melted butter, 1 tablespoon of olive oil, and the juice of half the lemon.
- Once the onions are soft, add the red pepper flakes, salt, and pepper. Add the juice of second half of them lemon and wine to the pan with onions and continue to cook for 1 minute.
- Place the cod on top the onions and season the fish with salt and pepper.
- Spread the crumb topping evenly over the cod. Sprinkle with remaining parsley.
- Bake for 20 minutes until fish is cooked through and the crumbs are browned.
