Oatmeal Crust

Method
- Cook the strawberries, lemon juice, zest, maple syrup and salt on medium heat in a saucepan. Simmer for 10 minutes.
- Then stir in the cornstarch. 1 tablespoon at a time to thicken the mixture. Simmer for 1 minute then remove from heat.
- Preheat your oven to 375 degrees and spray an 8×8 baking dish with food release.
- In a bowl mix together all oatmeal crust ingredients starting with the try together then adding the wet. Set aside 1 cup of the mixture for your topping.
- Press the oatmeal mixture into the 8×8 pan covering the bottom creating the crust layer. Top with all the strawberry filling. Then use your hands to crumble the remaining 1 cup of oatmeal mixture on top.
- Bake in the oven for 25 mins or until oatmeal is golden brown. Allow to cool completely in the refrigerator before cutting. Store covered in the fridge. Will be perfect for breakfast, desserts or even a snack for a few days.
